This is a great undercover healthy side dish for those littles or even adults who refuse to eat their veggies. I was almost kicked out of my family for serving straight mashed cauliflower. My granddaughter's response was, "Gam Gam what have you done!?!?" Mixing both potatoes with cauliflower was the key.
Ingredient:
3 medium size potatoes peeled and chopped
1/2 head of cauliflower broken up in small flowerets
3 cloves garlic smashed
1 tbsp salt
1/2 c milk
2 tbsp butter
2 tbsp heavy whipping cream
Salt and pepper to taste
Add potatoes, cauliflower, garlic and salt to a pot and cover with water. Bring to a boil; turn down to medium and simmer until veggies are tender. Pour into strainer. In the same pot add milk and butter; heat over low heat until butter has melted.
Mash veggie mixture back into the milk and butter using a ricer or food mill. (This process helps better hide the cauliflower).
Stir in whipping cream and salt and pepper. Top with butter or gravy. Enjoy!
