Quinoa and Black Bean Salad

A heart healthy, protein powerhouse, that's loaded with fiber and nutrients. This refreshing salad was inspired by Mexican fruit cups. Dressing includes Tajin, chamoy and lime juice. Quinoa (keen-wa) is a seed and has a nutty earthy flavor. This 5000-year-old grain is considered a superfood.



Ingredient

1 cup uncooked quinoa

2 cups jicama diced in 1/2-inch cubes

1 cup cucumber diced in 1/2-inch cubes

2 cups watermelon diced in 1/2-inch cubes (mango and papaya are also great options)

1 can black beans

1/4 cup onions finely chopped

2 tbsps. cilantro finely chopped

2 tbsps. jalapeño finely chopped


Dressing

1/3 cup oil

1/3 lime juice

1/4 cup chamoy

2 tsp Tajin

Salt and pepper to taste

Cook quinoa according to directions. You know when it's done when it's tender and translucent. Cool to room temperature.


Gently mix together all the chopped fruits and veggies in a large bowl.


Make dressing by add ingredient to a jar and giving it a good shake. Pour the dressing over the quinoa mixture and toss until it is completely combined.


When serving top with an additional shake of Tajin. Enjoy
